摘要:

桦木加碱蒸煮得到提取液, 采用膜电解工艺回收部分碱, 然后对除碱液进行脱木质素后, 经浓缩、喷雾干燥得到焦糖色 素产品;对该产品进行性能测试, 同时在不同pH 下, 考察其色率和红色指数的变化。结果表明:通过膜电解4 ～ 5 h , 可以回 收70 %以上的碱;焦糖色素的色率随pH 的增大而增大, 色率最大相差3. 5 万个EBC 单位, 但pH =3. 0 ～ 7. 5 时, 色率均符合 国家标准, 红色指数随pH 的增大而减小, 红色指数最大相差1. 78 。自制焦糖色素产品性能符合国家标准。

Abstract:

The material partly recovered alkali with a membrane - elect roly sis , which is extracted from birch by adding alkali and steam - digestion. Then treatments were carried out to recover alkali liquid , remove the lig nin , condense and spray drying process to obtain caramel pigment . As a result , alkali was recovered over 70 % by membrane - electro ly sis about 4 - 5 h. For caramel pigment with pH v alue increasing , the change of color ratio rising , too , and the biggest D - value of color ratio was 35 thousand EBC. But to pH v alue in the range o f 3. 0 - 7. 5 , color ratio met the national standard , so obtained caramel could adapt better. How ever , red index decreased with pH value increasing , and the biggest D - v alue was 1.78. The quality of prepared caramel colorant met the national standard.
